· Necessary tools:

· Mill , long-necked kettle, electronic scale

Numbers :

15 grams of coffee, 225 ml of water, preparation time from 2:15 to 3:00, ratio 15

If you own a Baratza Encore grinder   Put it on number (15) as a starting point.

· Ratio:

· The ratio of coffee to water is the coffee-to-water ratio, meaning how much water do I add to each gram of coffee? It is a rule for coffee.

Steps:

Place the filter in the funnel by folding it on both sides, and moisten the filter by passing water over the walls of the funnel. This helps in obtaining pure flavors in the cup, untainted by the effect of the paper flavor.

The closer the grinding time is to the brewing time, the better, as oxidizing agents begin to work on the flavors that characterize the selected coffee from the moment the grinding begins.

· Place the ground coffee into the funnel and level the surface by shaking the funnel.

· Start pouring water when it reaches 92°C (1 minute after boiling).

· Start pouring 30 grams of water.

· Start the timer and wait 20 seconds.

Pour up to 100 grams of water, making sure to use a circular motion when pouring and avoiding getting close to the edges of the funnel.

After 55 seconds, resume pouring again, and pour up to 170 grams of water.

After 1:30, pour to 225 grams.

· Wait until the coffee flow stops (should be between 2:15 and 3:00), and then discard the filter.

Put the coffee in a warm cup and enjoy your daily dose.
